Well, it’s when your chocolate looks… wrong! The chocolate can go cloudy or chalky, some people think it even looks mouldy but this is not the case.\u003c\/p\u003e\n\u003cp\u003eThere are two types of blooming that can happen to chocolate. Fat blooming occurs when your chocolate gets too warm (which is what’s happened with this batch, thanks to the heat wave). The cocoa butter melts and rises to the surface where it crystallises to form a dull white finish. Sugar blooming occurs when there is a sudden temperature change from warm to cold.
